As a kid, Theresa “Sam” Houghton loved helping out in the kitchen. The experience she gained lending a hand with cooking and baking gave her the necessary foundation for learning how to prepare healthier meals as she transitioned from the Standard American Diet to vegetarianism and then to veganism. She started Quantum Vegan as a way to share this journey and connect with the vegan community. After seeing the film Forks Over Knives, Sam decided to remove as many processed foods as possible from her diet, eliminate bottled oils and focus on a whole-foods, plant-based way of eating.
This journey wasn’t without its bumps in the road. After struggling with anorexia and bulimia, Sam was drawn to two things that helped her healing process: God and food. Struck by a passage in 1 Corinthians, Sam realized that fighting with her body wasn’t what God wanted her to do and began a journey to reacquaint herself with food in a way that is healthy and nourishing. Her focus on faith continues to keep her grounded as she seeks to bring wellness to others.
Sam is a graduate of the Nutrition Consultant program at Bauman College. She holds a Certificate in Plant-Based Nutrition from the T. Colin Campbell Center for Nutrition Studies and is a member of Toastmasters International where she holds a Competent Communicator designation and serves as part of the Capital View Toastmasters club.
In addition to cooking and developing recipes, Sam has given talks on both veganism and eating disorders and has hosted a screening of the film Forks Over Knives at her local library. She regularly teaches classes on plant-based food and health at Different Drummer’s Kitchen in Albany, NY and has appeared on both Focus on Albany and WAMC’s Food Friday. Her articles and recipes have appeared in Eco Local Living magazine and on One Green Planet, WishGarden Herbs, Reduce Footprints and The Happy Body Network. She enjoys keeping up with the latest news in plant-based living and sharing it with her readers.
Sam’s food philosophy is based on the idea of “the closer to the plant, the better!” Today, Quantum Vegan aims to help individuals, families and workplaces move away from today’s processed food-like offerings and toward eating whole foods in their natural states. Sam believes that a whole-foods, plant-based diet that replaces refined foods and animal products with fresh fruits and vegetables, raw nuts and seeds, legumes and whole grains is the road to true health—and the tastiest way to eat!
When she’s not cooking, blogging or working on schoolwork, Sam enjoys walking, HIIT and kettlebell workouts, knitting, reading, writing, spending time with the family and, of course, shopping for food, especially at farmer’s markets.
