Recipe: Ridiculously Easy Chocolate Peanut Butter Oatmeal

Remember Reese Puffs?  Those super-sweet puffs of chocolate peanut butter goodness that made you feel like you were eating dessert for breakfast?  Yeah, I loved them too.  Enough that I hunted down a vegan equivalent (Envirokidz Leapin’ Lemurs) to devour with similar zeal.  But after seeing Forks Over Knives, I’ve felt compelled to move more toward whole foods.  Or at least, plant-based foods that don’t come in a box.  Does that mean no more sticky-sweet chocolate peanut butter cereal for breakfast?  Of course not!  I found myself craving just that sort of morning treat recently, so instead of turning to premade cereal, I pulled out the oatmeal and made my own.

This really is ridiculously easy.  I can’t believe I didn’t do it sooner!  It’s warm, it’s filling, it takes almost no time at all to prepare and it tastes like it’s horribly bad for you.  But it isn’t.  I wouldn’t eat it every day, but it’s an awesome treat when you’re feeling the urge to scarf down some highly processed kids’ cereal.

Ridiculously Easy Chocolate Peanut Butter Oatmeal
serves 1

Ingredients
1/2 cup rolled oats
3/4-1 cup water, depending on how wet you like your oatmeal
1-2 tsp cocoa powder, regular or raw
1 tbsp creamy peanut butter
maple syrup, agave nectar or other natural sweetener, to taste

Directions
1) Place the oats and water in a small saucepan over high heat.  Bring to a boil, reduce the heat and simmer, stirring occasionally, until the desired consistency is reached.

2) Remove from the heat.  Stir in the cocoa powder, peanut butter and sweetener to taste.  Serve hot and enjoy!

If you’re feeling really decadent, you could toss in some cocoa nibs or top the oatmeal with some vegan whipped topping.  Or swap out the peanut butter for sunflower butter, almond butter or whatever you’ve got on  hand!
